INGREDIENTS
Salad
  • 8 cups butter lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • All-natural pepperoni
  • Black Olives
  • Green Olives
  • Marinated Artichoke Hearts
  • Banana Pepper Rings
  • Parmesan cheese
  • Red Onion
Roasted Chickpeas
  • 2 15-ounce cans chickpeas
  • 2 tablespoons olive oil
  • ½ tsp salt
  • 1 tsp dried thyme
  • 1 tsp garlic powder
Italian Dressing
  • ⅓ cup olive oil
  • 3 Tbsp red wine vinegar
  • 2 tablespoons grated Romano cheese (optional)
  • 1 teaspoon honey
  • 1 teaspoon freshly ground black pepper
  • ¾ teaspoon salt
  • ¼ teaspoon garlic powder
  • 1 tsp dried parsley
  • 2 Tbsp all-natural mayonnaise (optional)
INSTRUCTIONS
  1. Preheat oven to 400 degrees.
  2. Rinse and drain chickpeas. Lay on a towel to completely dry.
  3. Place in a bowl and toss to coat with olive oil and seasonings.
  4. Bake on a parchment lined baking sheet for 20-30 minutes stirring every 10.
  5. Remove and set aside.
  6. Meanwhile chop all vegetables and place in dishes creating a bar.
  7. In a mason jar or blender add all salad dressing ingredients and shake or blend until fully mixed.
  8. Prepare salad to your liking.
  9. Enjoy!
